mmmmm! nice question!! It will give me some ideas too! what do you make at the moment - lets have recipes!? Here are some I love... 1. spanish style tortilla ie. finely sliced potato (pre cook if you like), egg, with veg of your choice and lots of herbs and garlic. cook thick, turn (use a plate), slice like a cake, eat cold with salad. keeps well - if you don't eat it. 2. buy a wide neck thermos and do soup. thick lentil, try moroccan with cinnamon, mint; Armenian with lemon cumin and apricots; tomato and orange or coriander. 3. Quinoa or couscous salad. (St. Dalfour actually do a good vacuumpack tinned one tho rather salty.) Add nuts, sundried tom, fresh bits of all kinds, carry the dressing separately. 4. Fish salad like tuna, mackerel, salmon, if you eat those. with whatever really, veg, tomato, pasta, rice, couscous...try some hot smaoked paprika to dress it. Or lime. Sesame oil dressing is tasty and healthy. 5. I don't go for sardines but you might. cold bruschetta with sardine? fresh salad or rice etc. as above? 6. Make fish pie with mash (need not be potato) and tuna, onion, herb, whatever seasoning, I like sliced tomato in the middle. Great cold as well as hot, travels well. You can put cheese on top if you eat cheese. 7. Do you like pitta? panini? wraps? I find them a bit stodgy and wheaty but a good change. I like a thin pancake or omelette wrap (can use gluten free flour or lentil flour for pancake). roasted veg, salad or rice salad. Falls apart a bit. 8. Tofu bits, even the new Quorn flavoured bits (barbq etc)if you go for that; cook, eat cold, salad etc. High protein, satisfying. speaking of protein - hard boiled egg! 9. got to say, NUTS! how can we use them - ideas please. Seeds too. So healthy, tasty, filling. Nut rissole, anyone got a good recipe, does not fall to bits?? Handfuls of nuts/seeds in most of the above. Home toasted (lightly) as snack. Time to gather fresh hazels! timeconsuming but so delicious, so different from bought. Invest in a 'cup-and-screw' type nutcracker and get stuck in with the family instead of, or as well as, TV! I love nut curry too (fessenjan) but would not want it cold. 10. vege sausage pretty good cold, add chutney pickle sauerkraut miso, olive tapenade, or whatever. Find one with no hydrogenated oils. 11. Falafel! make own (raw chickpea best) or some good mixes on market. Avoid pitta, take salad, chutney or dip with. freezes well. 12. Good oldfashioned ploughmans/womens/ok call it what you like. bread/cracker, good cheese, something strong like pickle or chutney, something freah like lettuce carrot apple. beer??? or juice!
